[fix](Nereids): Convert VarcharLiteral to StringLikeLiteral in Function Signatures (#35536)
## Proposed changes This pull request updates the function signatures where VarcharLiteral is currently used, replacing it with StringLikeLiteral. This change aims to enhance flexibility and consistency across functions that handle similar types of string data.
